Greek Spinach Rice

I recently dished up Greek spinach rice at my friend Shambhu’s house during my trip to Westhampton, NY. It just so happened that his cleaning lady was there during lunch. I had to surprise her with a taste of greek cuisine!
Becky was impressed by how tasty, yet healthy it was. I told her it’s a staple dish that my yiayia would make for the family as I was growing up.
Through my experience in New York, I realized I should share this superb rice dish with everyone. So, here is the killer recipe for Greek spinach rice on akispetretzikis.com, a food blog by one of my favorite Greek chefs Akis Petretzikis.
Just a few suggestions:
Preparing the spinach is easier if you use the largest bowl you have
Adding chicken bouillon boosts flavor, 1 teaspoon should suffice or to your taste
Switch up the kind of wine you’re using. White wine is my preferred choice, but sometimes a deep red wine makes for a nice change
Sprinkling feta crumbles to top the dish off will take you to heaven
