On March 25 my Yiayia filled me in that it’s Greek Independence Day and everyone in Greece celebrates by cooking up the best seafood dishes. One dish Yiayia likes cooking is skordalia with any fish dish.

“Skordalia is traditionally a thick, tangy puree of boiled or baked potatoes (or water-soaked bread) mixed with lots of garlic and olive oil. At the busy new fish restaurant 7 Seas in Thessaloníki, the skordalia is thinned with yogurt and water to make a dipping sauce for tender, anise-accented nuggets of salt cod.”

I’m excited to share Food and Wine’s finest recipe for Salt Cod Fritters with Garlicky Skordalia with more than four thousand reviews and 5/5 stars, available here.
