Stuffed grape leaves, or Dolmades are a classic Greek food. Dolmades are filled with ground meat, rice, and herbs.
They are first cooked in stock and then covered in avgolẻmono sauce. Avgolẻmono is a famous Greek sauce that is made of eggs and lemon juice. It’s added to the meatballs to enhance the flavor and texture of the dish.
I’ve found a quality recipe for Dolmades on souvlakiforthesoul.com, a food blog by Peter, a fellow Greek food blogger and food photographer.
My only adaptation to the recipe is using a mixture of two ground meats, half ground beef and half ground pork.
I grew up eating Dolmades. My Yiayia Sofia would make them. Except most of the time my Yiayia would use cabbage. Grape leaves are seasonal and weren’t always available.
Dolmades are great anytime of year, but they're particularly satisfying in winter.
This dish has become one of my all time favorites because the flavors are out of this world. For this reason I encourage you to treat yourself and try it.
I wish you a happy new year with many happy suppers to come. Enjoy - Kali Orexi!
