Greek Bean Soup - Fasolada

Fasolada is a traditional Greek bean soup that is regarded as the national dish of Greece. This soup is also one my Yiayia Sofia's favorite meals to make because it's so simple to cook. I find fasolada ideal for a weeknight dinner.

"It is a simple and hearty soup, made with small white beans, a handful of vegetables and copious amounts of extra virgin olive oil … The result will be a robust, delicious and nutritious soup, that will warm up your soul on a cold fall or winter night. One improvement to Marilena's recipe is using different beans such as peruvian and pinto beans. I like mixing the beans and I find it more flavorful than using navy beans as called for in many fasolada recipes.
