Youvarlákia is a traditional Greek comfort food. I love this dish because of the complexity of flavors going on. And it’s simple to cook.

This hearty soup is comprised of meatballs made with ground meats, rice, and herbs. They are first cooked in stock and then covered in avgolẻmonosauce.

Avgolẻmono is a famous Greek sauce that is made of eggs and lemon juice. It’s added to the meatballs to enhance the flavor and texture of the dish.

I’ve found a recipe for youvarlákia on theviewfromgreatisland.com, a food blog by Susan Lightfoot Moran, a food blogger and food photographer.

My only adaptation to the recipe is using a mixture of two ground meats, half ground beef and half ground pork. And garnish with dill when serving.

I grew up eating Youvarlákia. My Yiayia Sofia would make it. Except Yiayia adds potatoes in the stock before cooking the meatballs.

Youvarlákia is great anytime of year, but it’s particularly satisfying in winter.

I wish you happy holidays and even happier suppers. Enjoy - Kali Orexi!
