Greek Black-Eyed Pea Salad

I’m so passionate about Greek cuisine that I love investigating Greek foods online. This led to a conversation with my Yiayia Sofia about Greek foods not popularized in the US. And I asked Yiayia what my Aunt Niki cooks. Yiayia said the Greek black-eyed pea salad and that my Aunt makes it all the time.

I’m so happy to share a popular recipe for this salad available thanks to foodandwine.com.

I also asked Yiayia about the ingredients. And It turns out you can enhance this salad. My Greek Aunt adds kalamata olives and tomatoes (chopped into small cubes).
