Patatosalata: simple and healthy potato salad

A traditional Greek recipe that serves 2

Patatosalata is a classic Greek recipe comprised of boiled potatoes, red onion, parsley, oregano and an olive oil and lemon salad dressing. You may also add kalamata olives, scallions and capers. It makes for a great side dish with meat, or simply as a light dinner.

My Yiayia (grandmother) Sofia made this for me and I loved how simple and delicious this meal is. In fact, yiayia said her mother used to make potato salad this way; my great grandmother would top it off with just a sprinkle of oregano.

The potatoes take in the rich flavors of the organic ingredients. Enjoy this tasty and filling potato salad, the Greek way.

Ingredients

For the Salad:

  • 5 - 6 boiled potatoes, yellow, red or sweet potatoes

  • 1 red onion, sliced

  • ¼ cup parsley or dill, finely chopped

  • Sprinkle of oregano

  • Small portion of feta cheese

Additional Ingredients:

  • 2 scallions (instead of the red onion), chopped

  • ½ cup kalamata olives

  • 1 tablespoon capers

Dressing:

  • Juice of 1 lemon

  • 3 tablespoons olive oil

  • Salt and pepper, to taste

  • 1-2 garlic, minced

Directions

  1. Fill a pot with potatoes (unpeeled) and add water to cover them. Bring to a boil (and maintain a gentle boil) and add 1 teaspoon salt. Cook the potatoes for around 8-12 minutes, or when they're tender all the way through when pierced with a fork.

  2. Allow the potatoes to cool. Meantime, prepare the salad dressing, making sure to wisk at an angle to combine, or emulsify.

  3. Peel the potatoes and cut them into slices. Put it in a salad bowl.

  4. Add the remaining ingredients, plus dressing and give it a good toss to coat.

  5. Serve with a small chunk, or crumbles of feta cheese.
